This organic cask/barrel-aged balsamic dressing from Modena, Italy, is made from Lambrusco, Trebbiano, and Sangiovese. The aging process results in a rich but delicate condiment with a warm brown color and a thick, fluid consistency. It has relatively low acidity, less than 6%, making it an ideal dressing for fish, shellfish, ice cream and a multitude of other uses. The aroma is penetrating and persistent and it has flavors of port and madeira.
We call it Cask 10 to give people in the United States a sense of the age of the vinegar. You will be able to taste and feel the difference between an aged vinegar and the cheap substitutes made by adding caramel or other thickening and sweetening products. Certified organic by CCPB SRL.
